I find lateral work is really good because it supples the horse, and gets them really stepping under themselves, pushing forward to contact, and using their hind ends. These are the things you need to get nice transitions. You need the horse to have energy built up in their hind end, with contact in the front so that they don't just run forward.
Leg yields and shoulder ins and haunches outs are really good.
Leg yielding and transition over poles. Practice setting up the horse's body by having them bend the correct way for the lead, and outside rein (inside leg to outside rein) and ask to go more forward.
