When you're riding. Really test the horse. Asked yourself: Is he comfortable or is he wonky and uncomfortable? Do you think he can compete or be able to do well against the other horses at his jumping height or level? Do you think he'll take you far/ where you want to go in riding? Can you see yourself going far with him? When you're on the horse you should really test the horse: Does he have a lead change? Can he jump the height? Can he extend and collect? Is he a good mover? This is just general things you should be asking yourself to better benefit your horse search. Good luck!
