Pasture Maintenance: While I do not have my horse just yet, our pasture grass is tall. When we do cut it, should we treat it like hay-- let it dry out and take it in?

If the pasture grass is long I just usually mow it and then wait a few weeks for the extra grass to decompose. You could take it as hay but again it depends on the quality of the hay and the amount you get off the field. Remember horses are very sensitive.
Depending on the quality of the pasture, yes you could bale it as hay. But if the grass is not worth baling as it isn't good quality or something then you can just mow it.
