When my horse gets keen I have a habit of holding her back too much and we lose our rhythm jumping. Do you have any tips on keeping myself calm when she gets cocky?

Try using your seat more instead of your reins. It will slow her down but it will help you keep your balance as well.
Try practicing many different combinations of jumps and strides. It will keep her paying attention to you so she won’t get as forward. If she starts to speed up or not listen to you, do a circle or something different so she gets back in tune with you.
You could try to talk to your horse or take deep breaths.
