Any advice on how to really control your horses canter? I ride a draft and she tends to have a large stride and because of it she can tend to come out of her frame.
Circles. It will encourage her to bring her hind legs further underneath her body and help her to balance more

Think about keeping back and belly between two boards and it may seem stiff but the horse actualy appreciates you hitting the saddle in the same spot more than trying not to bounce. Think about lifting your feet out of the stirrups slightly. The more you press down, the more weight you take out of your seat, the worse you will bounce.
What should I do if my welsh pony tourks her head up at the trot and canter, I have her in a D ring french link, I don't know if I should change her bit, or a technique?
yes, change bit. French link tends to put more dig in the tongue. I don't often see horses who can take a French link. An oval mouth or even a Mullen mouth puts more even pressure across the tongue
I want to clean my saddle pad and half pad. Do I just put the saddle pad and half pad in the washing machine with detergent?
Depends on the material of the half pad. If it's wool or sheepskin, get a wash that is specifically made for it, otherwise it will dry out and shrink
